A week in Nashville, TN
Pets: 2 very spoiled dogs and a kitty
Average monthly grocery budget: $400 but with the virus.... $800 or so. Not sure how we spend so much ugh.
Occupation: Insurance claims, husband is a business analyst for a non profit (aka underpaid)
location: Near downtown Nashville, TN
Stores: Aldi and Kroger. We bought a Sams club membership with our stimulus money to have another store to get toilet paper and cleaning supplies from, but will likely not continue to use it for groceries.

Day 1 Wednesday
6 am working from home the last four weeks has saved me so much time and money. I get to sleep in an extra hour and it's amazing. I get up, head downstairs, and start up my computer. I take the dogs for a trot then prep coffee once I'm back in. I take my coffee with a dash of regular white sugar and a splash of half and half. I also fill up my 32 oz water bottle to have for the morning. My husband takes his coffee the same way. We purchase beans From our best local coffee shop, Crema (I'm pretty sure they shop everywhere, buy some!!!) and make our coffee with that. If you're ever in Nashville, grab a Cuban from Crema. It'll change your life. I also take my SSRI and Vit D supplement.
9 am I use my 15 morning break to eat breakfast. I fry up some frozen hash browns with onions, peppers, spinach, bacon, garlic, green onions and lots of spices then scramble an egg into it. I top it with salsa, hot sauce, cheddar, queso fresco, and sour cream. A makes the same thing but he has two eggs and fries them up. He also skips the cheese because he hates cheese. It's very hard to love a man that you can never share a delicious cheesy appetizer with.
11 am I'm not very hungry yet but I use my lunch break to do homework. I also have a nice hot cup of lemon ginger tea with probiotics. I add an extra dash of lemon juice for an extra citrus punch and some turmeric powder. I'm usually a skeptic about natural healing stuff but turmeric really does seem to help my inflammation.
1 pm I make tuna salad and we have lots of celery and red onion left so I attempt to pickle them! Fingers crossed it works. After making the tuna salad, I decide I'm not very hungry so I put it in the fridge for later. A comes down for lunch and watch some Gourmet Makes from Bon Appetit youtube. We've seen them all but love to rewatch them. I love Claire so much.
2 pm ok now I'm hungry. I take a piece of sourdough, cut it in half, and add some of the tuna salad with a slice of sharp cheddar.
3 pm time to start my commute home. (Sorry, I'm still new to work from home so I'm annoying about it), I walk the 2 yards to my couch from my desk and plop down. I'm back in grad school, only taking one class right now, but I've been working overtime and it's finals week. I'm really behind and burnt out and want to cry. (I finished my weekly overtime on Sunday so luckily I'm done with that.) It amazes me when people work AND raise a family AND go back to school. Heck even just the raising family part looks too hard for me.
4 pm I put a handful of Aldi off brand Takis in a bowl and enjoy that for a snack while I do more homework. These chips are my guilty pleasures and I can usually eat the whole bag in one day but I'm rationing them out. It's a practice in self restraint. A. snacks on off brand Frosted Flakes during this time while he plays his guitar and bass upstairs.
5:30 pm we lose power AGAIN! I was just about to eat some soup. We were out of power for nearly 24 hours Sunday to Monday but now it's sunny and bright and we lost power AGAIN?! What the heck. I can't do homework now due to wifi being down. I decide to open my Fab Fit Fun box that got delivered today. It was my first time purchasing it. I make the most reckless financial decisions when I first wake up in the morning and scrolling through my phone, anyone else? This was one of those reckless purchases but I'm so happy with it. I'll definitely upgrade to the yearly one eventually.
6 pm power came back after just 30 mins thank goodness. I give up on homework. I hate finals week. I feel like I've gotten dumber since I finished undergrad six years ago. I made Damn Delicious Chicken Noodle Soupbut instead of noodles, whipped up some home made dumplings to drop in. I prepped it yesterday on my lunch break so we eat that tonight. It's so simple but has so much flavor. We eat while watching SNL.
7 pm even though we lost power, our fridge didn't get above 45 degrees! And our freezer was jam packed so it was good for 48 hours. we could magically keep some of the $200 worth of groceries we stocked up on Saturday. Of course the power goes out a day after our big shop. We had ice cream that survived the ordeal so we have Private Selections Cookies and Cream milkshakes for dessert. I add two shots of vodka to mine to make it a boozy shake.
7:30 We play cards in bed (not a euphemism). We play the very mature games of speed and go fish. then we're asleep by 8:30.
Day 2 Thursday
6 am same routine. Start up the computer, meds, walk the pups, coffee, and water. This time I add sweetened condensed milk to my coffee instead of half and half and sugar.
9:30 am Frothy Monkey has the worlds best sandwich called the Britt. It's lemon dill cream cheese, smoked salmon, sprouts, and capers on a bagel. Sadly, it cost an arm and a leg and it's not on their limited menu right now. I make a knock off at home with an everything bagel and leave off the sprouts since I couldn't find any in store. The salmon is kroger brand and was only $8 so luckily this is a cost efficient way to eat my favorite sandwich. I mix up the cream cheese wirh fresh dill and lemon. I put a ton of capers on it because capers are amazing and my favorite food group. My knock off sandwich tastes even better than the OG, if I do say so myself (or maybe it's just because of the pound of capers I put.) A. makes himself hash browns, bacon, and eggs on his morning break. I also prep some frozen chicken for nachos. I put frozen chicken, olive oil, cilantro, and lime tequila seasoning in a bowl and stick it in the fridge so they can all become friends.
11 am more homework. My class ends TOMORROW! I'm half excited and half very anxious over finishing my final projects and consider dropping out because I'm too dumb to do grad school why did I think this was a good idea??? I make some calming tea but it doesn't work.
1 pm A. Is on lunch break and has errands to run. We only allow ourselves to leave the house sparingly, so this is a big deal! We look around the kitchen but don't need anything luckily. He stops at Starbucks since my friend sent me a gift card to celebrate finals week, she is an angel! I get an iced caramel macchiato and A. Gets a chai latte. We watch Middleditch & Schwartz on Netflix before he has to go back to work.
3 pm I'm off work which means, Homework. After walking the dogs (which we do like 12 times a day, it's just too much to mention but trust me, those spoiled brats are not neglected), I heat up some left over chicken soup and toast a slice of sourdough to eat while I do my homework.
6:30 pm Feeling PSYCHED from my afternoon coffee break. I usually don't allow myself coffee after 12 and now remember why. A. Makes us some air fried fried fish sandwiches. He makes the best fried fish sandwiches. We have frozen cod and he does his magic on them, we eat them on ciabatta buns with coleslaw mix, lemon juice, and tartar sauce. I add a slice of sharp cheddar to mine but A. Skips the cheese. We also air fry some French fries.
8 pm A. is asleep but me and the pets are awake doing homework! well the pets are also asleep but im up stressing over these projects. I did not leave them until the last minute but they're just very time intensive. One project is already at 100 pages. Kill me now. I make a cup of peppermint tea.
11 pm I'm a total wuss when it comes to sleep so this is very late for me. But I'm done! I'll proof read everything tomorrow before I submit my final assignments!!!
Day 3 Friday
6 am today is my last day of this class and then I have a two week break. I jump out of bed with that last day of school swagger and do the usual AM routine. But instead of coffee, I make an iced Cuban with our nespresso. I do one big shot of espresso (trying to save money so I just do one instead of two shots), milk, ice and sweetened condensed milk. I savor this after walking the dogs. A. makes a hot vanilla latte.
8:30 am I make my same old breakfast hash. A. Has the same minus cheese and makes fried eggs instead of scrambled.
10 am A wants more coffee. We grind up come Serato beans from Crema and make half a pot. We both take our cups with half and half and some sugar.
11 am time to review my projects. I make some lemon ginger tea since I'm still full from breakfast. It's funny how at night, everything looks great and you feel like the next Bill Gates. But in the morning, it looks like a child made all my graphs. Whatever it's fine screw it. I also bake the marinated chicken for nachos tonight on my break.
1:30 pm use my 15 min afternoon break to eat because I'm hungry again. I make a big bowl of spinach, lots of capers, some shredded carrots, cabbage, and throw some tuna salad and the pickled veggies I made earlier on top. I squeeze some more lemon and a dash of olive oil. It's actually a very amazing salad! I have a terrible relationship with food and only truly like junk and fast food, but im trying to eat better for health and more energy. I'm always tired, and duh, it's because of my diet. I also eat a few slices of prosciutto. I love prosciutto so much but can eat a whole pack in one sitting so I try to limit my intake. Aldi luckily has it for super cheap. A. makes a salami and prosciutto sandwich on sourdough and has some off brand Frosted Flakes
3 pm it's the freaking weekend! I make some peppermint tea and get back to finalizing my projects.
7 pm I AM DONE! Projects are submitted. We make chicken nachos for Friday fiesta. We use the kroger brand kick of lime tortilla chips (best store brand tortilla chips out there), heat up the chicken I cooked on lunch and some black beans, add some left over adobo rice A. Made on Tuesday, cilantro, and lots of hot sauce and salsa. I am normal and add queso and cheddar to mine, but A. Is not and skips the cheese. We watch more Middleditch and Schwartz.
8 pm we've been alternating between playing cards and watching Netflix, but we need cookies to celebrate my grad class ending. I make Bon Appetits Brown Butter and Toffee cookies but add M&Ms instead of toffee since most toffees have nuts and A. Is allergic. The cookies turn out amazing as always. I eat two before bedtime at 10 pm.
Day 4 Saturday
9 am I usually work out 3-4 days a week at the Y but obviously that isn't happening. I miss the classes a lot. I also took last week off working out due to school but it's time get back at it. I walk for 20 mins to warm up outside. I bought Natache Oceane's Home Reload workout and do the first workout. I've done it before and it is hard but I always feel so good afterwards! Working out has eradicated my neck/shoulder pain and I can tell a major difference in my pain when I skip workouts.
10 am after showering we get ready for the grocery store. I am starving so I grab a cookie on the way out. Pre COVID, we used to do a medium shop on the weekends then a small shop during the week since we'd always forget something. Now, we try to go only do one big shop every ten to twelve days, but we had to throw some stuff out whe the power went out so we're forced to go. We stop at Sams club for a 25 lb bag of flour, cereal, veggie straws, frozen salmon, smoked salmon, breads naan, frozen chicken and olive oil. It's our first time at sams club in like five years, I bought a membership with our stimulus money, and I didn't realize how limited they are on actual groceries. We head to kroger for milk, eggs, ice cream, club soda, spinach, frozen hash browns, heavy cream, puff pastry and white chocolate chips.
12:30 pm We are home and starving. I heat up some chicken soup and make the same bagel sandwich. A. Makes left over nachos. I whip us up a copy cat cinnamon dolce latte using this recipe but use our Nespresso for espresso instead of instant coffee. I make mine iced and A. Has his hot. I also make a club soda with fresh mint and lime juice. Way better than La Croix.
3 pm We got a hand me down dog from a relative that passed away and his birthday is this weekend! He's 11 now. My dad found a stray covered in dirt, underweight, and covered in tumors but he couldn't keep her since he was moving. So we ended up with her two years ago and May is our gotcha date so it's also her birthday in our eyes. The vet thinks she's 18-20 years, she is a fossil. She is now a full on couch potato, a healthy weight and all the tumors are benign. Anyway, all that to say I bake them this dog friendly cake . The cat also has a birthday in May but hates anything but cat food so she doesn't eat any cake. I eat some of the batter while I make it an it is not too bad. The pups love the cake so much.
6:30 pm to celebrate my grad class ending we get Five Points Pizza to go. My favorite. We get the meatball pizza and a cheese pizza. I eat a slice of meatball and a slice of cheese. The pizzas are freaking huge. We will have left overs for forever. The slices are huge so two fill me up.
9 pm I eat two cookies even though I'm totally full. Why am I like this. I lay down and just feel defeated. My whole life revolves around food. I'm either wanting to eat something and obsessing over it, or beating myself up for giving in and eating it. I can never stop myself from eating when I'm full, and I only ever want to eat junk food.
Day 5 Sunday
7 am so much for sleeping in. I walk the dogs then make an iced mocha with our Nespresso. I'm working overtime so I start up my computer and get to work.
8:30 am I use my fifteen break to make these oatmeal banana pancakes. I add dark chocolate chips. I burnt the second batch because I was giving the dogs medicine but they still turn out to be a 10/10 in my book. I check my grades and see that I got an A in my class! I am SO excited! I worked really hard and it feels good to see my hard work pay off for once. I celebrate with a cookie.
10 am A. Is awake. He makes a half pot of coffee and eats some pancakes. He says they taste healthy and gives them a 6/10. Boo. I try to have a cup of coffee but he made it so weak it's just water. He agrees it's bad but he powers through.
12 lm done with overtime for the day. I heat up two slices of the cheese pizza for lunch. I also make a club soda and juice half a grapefruit into it.
3:30 pm I spent the afternoon watching netflix and napping but we're going to my moms for Mother's Day. She lives out the burbs but we haven't seen her since Jan due to the virus. I pack her up some cookies and some pup cake for her dog. We order burgers from ML Rose. I get my mom and me Animal and A. Gets animal with no cheese. We all get waffle fries on the side.
7 pm we stayed outside my moms house and ate with her in her backyard. She loved the burger and cookies, and her dog ate the cake in one big bite! Success. We're home now and I have a cookie. I ate like crap all weekend, and lay in bed beating myself over eating terribly. I do this every weekend. It's never ending cycle of self loathing. I wish I could be normal around food. I swear to myself diet starts (again) tomorrow!
monday, day 6
6 am Mondays suck. I get some drip coffee going while I walk the dogs and start up my computer.
8 am I make my usual breakfast hash but this time I add chorizo and fresh cilantro. A. Has some as well. I turn on Normal People for background noise. I loved the book but the show just feels one dimensional to me.
11:30 am my job sucks and I'm just always feeling so depressed lately. I'm so grateful to have a job but I've been job hunting for forever now with no luck, and with the pandemic, I doubt I'll be switching jobs any time soon. When I'm this down, Food is usually the only thing that brings me joy and it's so unhealthy. I can feel a binge coming on, so I do a Natache Ocean workout on my lunch instead of eating. Hoping the urge to eat everything In sight subsides after a workout.
1 pm I did a face mask and showered then logged back on work at 12:30, but now I'm hungry. I eat two more slices of pizza. I feel much calmer and more in control so I can stop at two slices, even though I really want to finish it off and eat 10 cookies. A. Gets on lunch and makes himself a BLT and has a bowl of Cinnamon Toast Crunch
3 pm I'm getting more overtime hours in but need a pick me up. I make some club soda with fresh mint and lime. I use my fifteen minute break to start on dinner which delicious gnocchi tomato basil soup
6 pm done with overtime! I hate doing extra hours but the time and half pay is too good to pass up, especially when I can do it from home. I heat up the soup I prepped on break. A has some as well.
6:30 pm I portion out a half serving of ice cream and have half a cookie for dessert. I stayed under my calories for the day, even with dessert! I go to bed around 9 pm feeling content.
tuesday, day 7
6 am dog trot, coffee, medicine and start work.
7:30 am I'm hungry earlier today. I finish off the pizza we got Saturday, I have two slices of cheese. Note to self: only ever buy one pizza from Five Points. They are huge and last forever.
11 am I meal prep shrimp tacos (i take frozen shrimp, add cilantro, lime juice, olive oil and some soy sauce and stick it in the fridge), I also prep these goat cheese and tomato tarts. A. Used to do all the cooking since he worked from home before the pandemic but i really love to cook so I'm glad I'm home more now.
1 pm I'm stuck taking lunch 11-12 since I'm the newest person in my unit but I'm never hungry that early. I use my fifteen break to heat up the left over tomato basil soup. I also have a tart I made earlier and it's one of the best things I've ever eaten. A. Has soup and makes a BLT.
3 pm Im staying over for some OT work and portion out some off brand Takis for a snack.
6 pm done with overtime for the week! A. Heats up the shrimp for tacos. I eat three tacos on corn tortillas with lettuce, cheese, salsa and hot sauce. A. Has the same but of course without cheese.
6:30 pm I have a FaceTime date with my friend. We are both awful at make up so we're going to try to recreate a tutorial from pinterest. I make a Moscow mule with ginger beer, lime, and vodka (ya know, the usual), and get upstairs to my vanity. We both end up looking like damn clowns at the end of the call but it was so fun! I stop at two drinks because I don't want to be hung over for work.
9 pm I forgot to log my drink calories so plug that into my fitness pal. I went over by 200 calories and am so mad at myself. Whhhy am I such garbage. I need to quit eating/drinking before checking the calories. I, once again, beat myself up, and get on my fitness pal to log the rest of the week's food. I have a stern talk with myself about eating more than 1300 calories a day and then go to bed. Diet seriously starts tomorrow!
